If you substitute it will not cook the same.

a glass bowl that will fit right on top of a pot
use one large pot set one smaller pot ontop
2 pots one that fits inside the other will work. a Microwave will melt choclate or butter, and a stanless steel bowl over a pot of water will work for anything including Holandaise sauce. I guess it depends on what you need the double boiler for.
